  • Most of the carbohydrates found in our muffin mix are considered to be non-impact carbohydrates. These carbohydrates are insoluble fiber (which has 0 caloric value and passes through the gastrointestinal tract) and erythritol/stevia/monk fruit extract (which the FDA does not consider to be a total or added sugar for nutritional labeling and contains 0.2 kcal per gram)

  • Because they have 0 caloric value they’re subtracted from the amount of total carbohydrates to get a value of “net carbs,” which you can think of as the active carbs that affect your body and blood sugar. So to calculate. Net Carbs = Total Carbohydrates - (Fiber + Sugar Alcohol)
