Erythritol is fermented from sugars and found in many vegetables and fruits. It is considered to be one of the healthiest sugar alcohols because it's calorie-free, doesn't raise blood sugar levels, and passes through the digestive tract without getting absorbed into the body.


After the fruit or vegetable is fermented to create this sugar alcohol, it is dried into a granular powder to create erythritol.
